Since its creation, F. Chauvenet has reflected its attachment to and respect for the Burgundian terroir in the making of its wines.
Bright red with purple highlights. Vegetal flavors with nice fruity notes (black berries). Sunny, rich and well-balanced, this wine presents intense black fruit aromas. Silky tannins with a nice persistent finish.
Perfect balance between Cabernet Sauvignon and prime rib or game. At the end of the meal, with all cheeses, or a dessert but prefer those with chocolate notes.
To be served between 15° and 16°C.
Ready to drink as soon as they are bottled, "Vins de France" are not made to be kept for years.
The grapes are de-stemmed and the pre-fermentation process in stainless steel vats lasts 4 days. The alcoholic fermentation lasts 2 weeks with temperature control. In order to maintain good structure with soft tannins, the daily extraction is very soft and maceration is short. After malolactic fermentation, the wine is aged 6 months in vats.
“Vins de France” can be produced throughout the whole of France using grapes harvested exclusively within its borders. This quite new appellation (2009) allows for a greater liberty in winemaking compared to the appellation system. It is a great opportunity for our winemaker to express his skills with a wine with a steady style and unique personality.
