Since its creation, F. Chauvenet has reflected its attachment to and respect for the Burgundian terroir in the making of its wines.
Red colour with purple highlights. Fairly delicate but well-defined nose. Aromas of kirsch-infused fruit complemented by animal and woody notes. Very well-balanced, combining fine fruity scents with a good structure thanks to the tannins.
This wine will be perfect paired with beef steaks, lamb (braised or in sauce) or poultry-based stews. Its structure makes it a perfect companion for any type of cheese (fresh or aged).
In its youth, better serve at 14° to 15°C. (57-59°F.). Rather serve older vintages at 16°C. (61°F.).
This wine can age for 5 years to let more complex aromas develop but can also be drunk now.
100% Pinot noir.
The Pinot Noir grapes are handpicked, sorted at the arrival at the winery and 100% destemmed before 18 to 20 days of maceration and fermentation in wooden vats under controlled temperatures and with punching twice a day according to the Burgundian tradition. The malolactic fermentation is 100% achieved and followed by maturing and ageing in oak barrels (including 20%) for around 12 months.
In the heart of the Côte Chalonnaise, the historic cradle of Burgundy wine, Mercurey is one of the oldest renowned terroirs. The village takes its name from a Roman temple dedicated to the god Mercury, symbol of trade and prosperity. The communal appellation has 31 Climats classified as Premiers Crus. With red wines accounting for over 90% of production, it covers 596 hectares, including 143 Premiers Crus. White wines, which are rarer, represent 85 hectares, with 13 Premiers Crus. Mercurey thus offers remarkable diversity and remains an essential reference in the Côte Chalonnaise.
The 2023 vintage has been disrupted by a capricious weather all along the year. Despite a warm winter, an unstable spring, and a summer marked by heat pics, cool weather and stormy showers, this vintage offered Burgundy an abundant and gourmet harvest as well as fruity and expressive wines.
