Since its creation, F. Chauvenet has reflected its attachment to and respect for the Burgundian terroir in the making of its wines.
Bright golden yellow colour. On the nose, lovely aromas of white flowers enhanced by a hint of pepper. On the palate, the floral notes are present on the attack, followed by aromas of almond and pear. Beautiful structure on the palate with aromatic persistence.
This wine goes well with fish or snails, in cream sauce, white meats in cream sauce, fine cheese.
Drink ideally at a temperature of about 12-14°C (54-57°F.).
Already delicious, this great white Burgundy can age 5 years.
100% Chardonnay.
The Chardonnay grapes were hand-picked, sorted and then pressed. A cold settling was carried out for 12 to 24 hours. The alcoholic fermentations took place in thermo-regulated stainless steel vats with a precise temperature control and to bring homogeneity to the cuvée. Then the wine was put into 228-litre barrels (including 20% new barrels) for 8 months ageing on fine lees. A stirring was carried out, twice a month, until malolactic fermentation in order to develop complex aromas and to preserve the purity of the fruit.
In the heart of the Côte Chalonnaise, the historic cradle of Burgundy wine, Mercurey is one of the oldest renowned terroirs. The village takes its name from a Roman temple dedicated to the god Mercury, symbol of trade and prosperity. The communal appellation has 31 Climats classified as Premiers Crus. With red wines accounting for over 90% of production, it covers 596 hectares, including 143 Premiers Crus. White wines, which are rarer, represent 85 hectares, with 13 Premiers Crus. Mercurey thus offers remarkable diversity and remains an essential reference in the Côte Chalonnaise.
The 2023 vintage has been disrupted by a capricious weather all along the year. Despite a warm winter, an unstable spring, and a summer marked by heat pics, cool weather and stormy showers, this vintage offered Burgundy an abundant and gourmet harvest as well as fruity and expressive wines.
