Since its creation, F. Chauvenet has reflected its attachment to and respect for the Burgundian terroir in the making of its wines.
Golden, pale straw yellow in color. Very fine and mineral with notes of fresh fruit. Well-balanced, with a strong acidity that is nevertheless supported by a good maturity. Aromas of blackcurrant flower and lychee. This wine has the characteristics of a typical Sauvignon Blanc with great finesse and purity.
As an aperitif, or with seafood, a tuna carpaccio, smoked salmon, sushi or Japanese fish dishes, but also goat cheeses or asparagus in sauce.
Between 12° and 14°C.
Ready to drink as soon as they are bottled, "Vins de France" are not made to be kept for years.
The grapes are harvested at optimum maturity mechanically.
Enzymes are added to the juices before they are cold settled. The clear juice is racked. Fermentation temperature is regulated at 14°C.
“Vins de France” can be produced throughout the whole of France using grapes harvested exclusively within its borders. This quite new appellation (2009) allows for a greater liberty in winemaking compared to the appellation system. It is a great opportunity for our winemaker to express his skills with a wine with a steady style and unique personality.
